Soups for Type 2 Diabetes: What You Can Eat and How to Cook Them Properly

People with type 2 diabetes don’t have to give up soups. On the contrary, a properly prepared soup helps keep you full for longer, slows down the absorption of sugar into the bloodstream, and supports healthy digestion. However, the choice of ingredients must be strict.

Basic Principles of “Diabetic” Soup

  1. Broth: Rich, fatty broths made from pork or lamb are not allowed. Use a secondary broth made from chicken (skinless) or turkey, or better yet, a vegetable broth.
  2. Sautéing: Traditional sautéing in oil with flour increases the glycemic index of the dish. It’s better to skip it or cook vegetables in water with the addition of 1 teaspoon of olive oil.
  3. Vegetables: Potatoes, beets, and carrots contain a lot of starch. Their quantity should be strictly limited or replaced.
  4. Grains: White rice, semolina, and small pasta are not allowed. Replace them with buckwheat, pearl barley, brown rice, lentils, or peas (in limited amounts).

Which Soups Are Beneficial?

1. Vegetable Cream Soups (without potatoes)
An ideal dietary base. Thanks to fiber, they provide long-lasting satiety.

  • Base: Zucchini, cauliflower, broccoli, pumpkin, green beans.
  • Recipe: Boil the vegetables in water or a light chicken broth, then blend them. Add a spoonful of 10% fat cream for flavor.

2. Mushroom Soup
Mushrooms provide a rich taste with low calories. Use wild mushrooms or champignons. Combine them with leeks and herbs. Do not add potatoes.

3. Meatball Soup
The meat should be lean: chicken breast, turkey, or veal. Cook the meatballs separately or add them to boiling vegetable broth. Do not add rice to the mince—use a raw egg and herbs instead.

4. Pickle Soup (Adapted Rassolnik)
Allowed with some adjustments. Cook pearl barley separately until half-done. Completely exclude potatoes. Rinse pickles to remove excess salt. Use minimal carrots and onions.

5. Cold Soups (Okroshka)
A great option for summer. Dress it not with kvass, but with 1% kefir diluted with mineral water. Replace boiled sausage with boiled chicken or beef. Eliminate potatoes and add more cucumbers, radishes, and herbs.

Soups to Strictly Avoid

  • Meat solyanka (due to smoked meats, sausages, sugary tomato paste, and fatty broth)
  • Kharcho (high in rice, fatty meat, and spicy sauce)
  • Pea soup with smoked meats (peas themselves are acceptable, but harmful when combined with fatty additives)
  • Noodle soups and dumpling soups (flour and eggs create a heavy carbohydrate combination)

Important Eating Rule

Soup is only part of the meal. To avoid blood sugar spikes:

  1. Eat soup at the beginning of the meal (but don’t use it to wash down bread).
  2. Choose rye or whole-grain bread (no more than one slice).
  3. Add plenty of fresh herbs (parsley, dill, cilantro) to your bowl—they help lower the dish’s glycemic index.

Remember: Even a healthy soup can be harmful if consumed in excess. The optimal portion is 200–250 ml.

Before introducing a new dish into your diet, always check your blood sugar level 2 hours after eating. This will help you understand your body’s individual response.
